Experience the rich, deeply aromatic tradition of Turkish coffee. This finely ground coffee brew offers a unique full-bodied flavor, served in small cups and savored slowly, often as a digestif or a moment of reflection.

Ingredients

How to Make It

  • 1

Start by pouring 60 ml of cold water into a small copper pot, known as a 'cezve,' for each serving you intend to make. If you prefer your coffee sweet, now is the time to add 1 teaspoon of granulated sugar per serving.

  • 2

Carefully add 2 heaped teaspoons (approximately 10 grams) of extra-fine ground Turkish coffee per serving to the cold water in the cezve. Do not stir it in just yet; let it float on top.

  • 3

Place the cezve over very low heat. Allow the coffee to slowly absorb the water. After about 30 seconds, gently stir once or twice with a small spoon, just enough to combine the coffee and water, then stop stirring.

  • 4

Watch carefully as the coffee begins to heat. A dark foam will start to form on the surface. As it slowly rises, it should thicken and become light brown, taking about 3-5 minutes depending on the heat.

  • 5

Just before the foam reaches the very top and before the liquid coffee begins to boil vigorously, quickly remove the cezve from the heat. This is crucial for preserving the delicate foam, which is highly prized.

  • 6

Using a teaspoon, carefully scoop off about half of the rich foam and distribute it evenly into the small demitasse cups. This ensures each cup receives a good portion of the coveted 'köpük'.

  • 7

Return the cezve to the low heat for another 15-20 seconds, allowing the remaining coffee to rise again slightly but still without coming to a full boil. This second rise helps to extract more flavor.

  • 8

Slowly pour the hot coffee into the cups, pouring down the side of the cup to preserve the foam you already added. Be careful to leave the coffee grounds at the bottom of the cezve, as they are not meant to be consumed.

Frequently Asked Questions

What kind of coffee should I use for Turkish coffee?+

For authentic Turkish coffee, you need extremely finely ground coffee, almost like flour. It should be finer than espresso grind. Look for 'Türk Kahvesi' specific brands at markets.

How do I get that signature foam (köpük) on my Turkish coffee?+

The key to good foam is using cold water, finely ground coffee, and heating it very slowly over low heat without stirring too much. Remove it just as the foam rises, before it boils completely.

Why do Turkish coffee cups have sediment at the bottom?+

The sediment consists of the very fine coffee grounds that are not filtered out. It's an integral part of Turkish coffee's tradition and texture; it's meant to settle at the bottom and is not consumed.

How is Turkish coffee traditionally served?+

Turkish coffee is traditionally served in small demitasse cups with a glass of water on the side, often accompanied by a piece of Turkish delight (lokum) to cleanse the palate before or after.
