Pat the 800g zander fillets dry with a paper towel and season both sides with salt and pepper.

Melt 25g of butter in a large skillet over medium-high heat until it begins to foam.

Place fillets in the pan and sear for 4 minutes per side until the skin is golden and crisp and the meat is opaque.

Remove fish from the pan and set aside on a warm plate.

In the same skillet, melt the remaining 25g of butter and sauté 2 finely diced onions until translucent and soft, about 5 minutes.

Lower heat to low, stir in the 200ml sour cream and 3 tbsp of grated horseradish, stirring constantly until smooth.
