🇺🇸Two questions, two answers
Both puddings are built on a sweet vanilla custard of eggs, milk and sugar, yet they treat it quite differently. Bread and Butter Pudding pours a raw custard enriched with double cream over buttered bread and raisins, lets it soak, then bakes it under grated nutmeg until golden and puffed, with a slight wobble at the centre. Southern Banana Pudding cooks its custard on the stove, thickened with flour and egg yolks and finished with butter, then layers it with vanilla wafers and sliced bananas. It is crowned with a golden meringue made from the whites or, alternatively, chilled and topped with whipped cream.
