Frequently Asked Questions
Can I use dried fava beans?+
Yes, but you must soak them overnight and boil them until soft before adding to the rice.
What kind of rice is best?+
Egyptian short-grain rice is essential for its starchiness, which binds the herbs and beans together.
Why is the rice mushy?+
Too much water or over-stirring will break the grains; be gentle when folding in the herbs.
How do I serve this?+
Serve warm with a side of plain yogurt mixed with cucumber and a hint of garlic.
