Repeat this step one more time, using the final 50g lard, 50g currants, 1 tbsp peel, pinch spice, for a total of three folds and fillings.

After the final fold, shape the dough into a rough round or square and place it into a greased 20cm (8-inch) baking tin. Cover loosely and allow it to prove again in a warm place for 30-45 minutes, until visibly puffed up.

Preheat your oven to 190°C (375°F) / Gas Mark 5. Bake the Lardy Cake for 35-45 minutes, or until deep golden brown on top and cooked through. A skewer inserted into the centre should come out clean. If browning too quickly, loosely tent with foil.
